Bring vinegar, sugar, and kosher salt to a boil in a small saucepan over medium-high heat. Add shallot and cook ⏱️ 1 minute. Remove from heat and let cool to room temperature.

Arrange avocados on a serving platter and top with chile, lime zest, and pickled shallots. Spoon pickling liquid over top. Sprinkle with flaky salt and drizzle with oil. Serve immediately.
