Avocado Toast
This avocado toast makes the perfect vessel for savory and sweet toppings. This customizable breakfast recipe plays well with eggs, pico de gallo, and even mango!

For the Avocado Toast:

Set the oven to broil on high. Arrange the oven racks so that the top one is close to the heating element. Line a baking sheet with foil and arrange the bread on the prepared baking sheet. Broil the bread for ⏱️ 1-2 minutes on each side.

Brush one side of the toasted bread with 1 tablespoon of oil and sprinkle with ½ teaspoon of salt.

Cut the avocados in half. Pit the avocados and scoop the meat out into a medium bowl, discarding the skin. Add the lemon juice, remaining 1 tablespoon of olive oil, remaining ½ teaspoon of salt, and pepper. Stir with a fork, gently mashing the avocado.

Divide the mashed avocado among the toasted bread. Sprinkle with red pepper flakes, if desired.

For the Egg and Bacon Topping:

Using the small holes of the box grater, grate one hard boiled egg over each toast. Season the egg to taste with salt and pepper.

Sprinkle the avocado toasts with the bacon and drizzle with hot sauce, if desired.

For the Mango Coconut Topping:

Peel the mangos and cut the fruit from the seed. Dice the mangos.

Drizzle the avocado toasts with honey. Top with the mango and sprinkle with the coconut chips.

Top each avocado toasts with 2-3 tablespoons of pico de gallo. Garnish with cilantro, if desired.
