Avocado Margarita
This riff on the margarita leaves out the orange liqueur and gets a creamy upgrade from a quick avocado syrup that you make in your blender.

Blend 4 oz. fresh lime juice (from 4–5 limes), ½ cup diced avocado, 6 Tbsp. plus 1½ tsp (81 g) sugar, a pinch kosher salt, and 3 ¼ oz. filtered water in a blender until smooth, about ⏱️ 1 minute. Pour into a resealable glass jar and refrigerate for up to 3 days.

If salting rim, place 1 Tbsp. kosher salt on a small plate. Moisten exterior rim of a rocks glass with lime wedge and roll in salt. Fill glass with ice and set aside.

Combine 2 oz. blanco tequila, 1½ oz. Avocado Cordial, and ¼ oz. fresh lime juice with ice in a cocktail shaker. Shake until well chilled, about ⏱️ 15 seconds. Double strain into prepared rocks glass or an unrimmed ice-filled rocks glass.
