Preheat oven to 180°C fan / 400°F. In a medium bowl whisk together the olive oil, maple syrup, tamari, onion powder, garlic powder and smoked paprika.

Place the aubergine slices onto a parchment-lined baking tray and brush the mixture evenly over the surface of each piece; turn over and repeat on the other side.

Bake the aubergine slices for ⏱️ 30 minutes, turning over halfway through to ensure even browning. Remove from the oven and allow to cool slightly.

Lightly spread the bread with smooth Dijon mustard. Place ½ of the aubergine slices into each roll and top with lettuce and tomatoes.
