Preheat the oven to 190C (375F), fan setting.

Place the aubergine pieces onto a baking tray and drizzle with olive oil and salt. Cook for ⏱️ 30-35 minutes until soft. Once soft, remove and leave to one side.

Place a pan over a medium heat and add a tablespoon of olive oil from the sun-dried tomatoes. Once warm, add the onions and garlic and a pinch of salt and cook for ⏱️ 5-10 minutes until soft.

Once soft, add the tomato puree, thyme and chopped sun-dried tomatoes. Cook for ⏱️ 2 minutes before finally adding the tinned tomatoes and coconut sugar. Bring to the boil, before reducing the temperature and leaving to simmer for ⏱️ 30 minutes.

Once ready to serve, cook the pasta according to instructions on the pack. Drain the pasta, reserving a little of the water.

Stir the roasted aubergine and drained pasta through the tomato sauce, adding a dash of the pasta water.
