This fresh and nourishing soup is inspired by Thai flavours. The dried lime leaves are optional but will infuse the soup with a deeper flavour, bringing a taste of Asia to your bowl.

Place a large, heavy-bottomed pan over medium–high heat. Add a drizzle of olive oil. Once hot, add the onion, garlic and ginger, with a sprinkle of salt and pepper. Cook, stirring occasionally, for 5–⏱️ 6 minutes until softened and translucent.

Add the cumin, coriander, turmeric and cayenne pepper. Stir well and cook for a further minute. Then add the chopped courgette, red pepper, coconut milk and 400ml / 13.5 fl oz of water, plus the lime leaves (if using). Cover and leave to simmer for 13–⏱️ 15 minutes until the vegetables are completely tender.

Remove the lime leaves (if using) and using either a hand blender or high-speed blender, blitz until completely smooth. Adjust the seasoning to taste.

Serve topped with spring onions, chilli and a squeeze of fresh lime juice, if desired.
