Place the heavy whipping cream, powdered sugar, and vanilla into the body of a stand mixer with the whisk attachment (or into a large bowl with an electric hand mixer) and whip until stiff peaks are reached; set aside.

Place the ice cream, half of the stiff whipped cream, milk, apple pie, and cinnamon into a high powered blender. Blend until smooth.
