Apple, Pear & Raisin Cake
This is an old favourite recipe, which we’ve recently given a revamp to make it even better for you. I love the fruitiness of the apple, pear and raisin mix with the almonds and coconut sugar. It’s a perfect weekend tea cake when you’ve got people over and the leftovers are pretty heavenly for breakfast too!

Preheat the oven to 180C (350F), fan setting. Line a 23cm cake tin with baking paper.

Place the ground almonds, coconut sugar, flour, bicarb and baking powder in a large bowl and mix until there are no lumps.

Peel and grate one of the pears and both of the apples into the bowl. Add the raisins and mix everything together really well.

Add in the almond milk and rapeseed oil and mix until a smooth batter forms.

Peel and cut the last 2 pears into thin slices and place them on the bottom of the lined cake tin.

Pour the cake batter on top of the pears and bake in the oven for ⏱️ 35-40 minutes, until cooked through.

Leave to cool completely before serving.
