Stir together Gruyère and cornstarch in a bowl. Combine apple cider and vinegar in a medium saucepan. Bring to a boil then reduce to a simmer. Whisk cheese mixture into cider, by the handful, until smooth and blended. Whisk in pepper and nutmeg. Serve immediately with apples, pears, and baguette for dipping.
