Line an 8- by 8-inch baking pan with parchment paper, leaving a 2-inch overhang on two sides. Cook apple cider in a medium saucepan over medium-high heat until reduced to 1/2 cup, 40 to ⏱️ 45 minutes. Stir in heavy cream, sugar, butter, and corn syrup. Cook over medium-high heat, stirring occasionally, until temperature reaches 248°F on a candy thermometer, 10 to ⏱️ 15 minutes. Stir in vanilla and salt. Immediately pour into prepared pan. Sprinkle top with flaky sea salt. Cool to room temperature, at least ⏱️ 6 hours.

Use paper overhang to lift caramels from pan; discard paper. Cut into 64 (1-inch) pieces using a bench scraper. Wrap with wax paper candy wrappers, if desired. Store in refrigerator up to 1 week. Candy will soften at room temperature.
