Preheat oven to 350 degrees F.

Start by combining the flour, baking powder, salt, cinnamon and pecans in a large mixing bowl.

Next, add the milk, eggs, butter and sugar to another mixing bowl; then whisk until blended and add the wet ingredients to the dry ingredients.

Peel and core the apples; then using a box grater, shred the apples and add them along with 1 cup of the cheese to the dry mixture. Mix together until well blended; then pour into a 9-inch x 5-inch loaf pan that has been sprayed with cooking spray.

Finally, sprinkle the remaining Cheddar cheese on top and bake for ⏱️ 60-65 minutes or until a knife inserted into the center comes out clean. Allow the bread to cool slightly; then cut into 16 slices.
