Apple & Raisin Spelt Muffins
These muffins are great if you want an on-the-go breakfast. You can make a batch for brunch at the weekend and then enjoy the rest during the week.

📝 Preparation Steps

Preheat oven to 200°C / 180°C fan / 350°F.

Line a 12-hole muffin tray with cases.

Mix all the dry ingredients, except the apple and raisin, in a large bowl.

Once combined, add the wet ingredients and gently mix until you have a batter, then stir through the raisins and apple pieces.

Pour the mixture into the muffin cases, sprinkle with extra cinnamon and bake for ⏱️ 20-25 minutes, until well risen and golden.

Once cooked, remove the muffins from the oven and leave to cool for at least ⏱️ 10 minutes in their tin to firm up, then transfer to a wire rack to finish cooling or serve them warm.
