Whisk 2 large garlic cloves, finely chopped or grated, 3 Tbsp. fresh lemon juice, ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, ½ tsp. sugar, and ¼ tsp. crushed red pepper flakes, freshly ground pepper, or toasted sesame seeds in a medium bowl to dissolve salt and sugar. Let sit ⏱️ 5 minutes.

Add ½ cup hummus (such as classic, roasted red pepper, jalapeño, beet, or roasted garlic) and ¼ cup extra-virgin olive oil and whisk until emulsified. Whisk in ¼ cup chopped dill, parsley, or chives. Taste dressing and season with more salt if needed. Do Ahead: Dressing can be made 5 days ahead. Cover and chill.
