In a medium sized skillet add 1 tablespoon olive oil over medium high heat. Add 1 cubed red bell pepper, 1 cubed green bell pepper, and 3 minced garlic cloves and cook for about ⏱️ 3-4 minutes until almost tender. Season 1 pound peeled and deveined large shrimp with salt and pepper and cook for ⏱️ 2-3 minutes until pink.

In a small bowl whisk ¼ cup soy sauce, 1 teaspoon sesame oil, 1 teaspoon light brown sugar, 1 teaspoon sriracha, and a pinch of red pepper flakes. Mix together 1 teaspoon cornstarch and 1 tablespoon water and whisk into the sauce. Pour sauce over the shrimp mixture and add ¼ cup peanuts .
