Almond Milk
I make almond milk every week, it’s really so much simpler than you’d think and it works amazingly in everything. The natural taste is quite sharp, just like natural yoghurt, so I like to add a little cinnamon and date syrup to take the edge off if I’m using it with granola or in porridge. Otherwise I just blend it into my morning smoothies and use it for both sweet and savoury baking.

📝 Preparation Steps
1
Soak the almonds overnight in a bowl of water – this process is absolutely essential.
2
Once they have soaked for at least six hours, drain them and add them to a blender with the three cups of fresh water.
3
Then blend it all for a minute or two until a smooth milk forms – if you want your milk a little runnier add more water.
4
Then place a jelly bag strainer on the top of a jug and pour the milk through it.
5
Once the bag is partially drained, squeeze the rest of the liquid out with your hands.
6
If you’re using the cinnamon or sweetener then place the milk back in the blender and blend again with these.
