In a large bowl, combine the salsa, green chiles, chili powder, oregano, garlic powder, and onion powder. Add the beef to the salsa mixture and stir thoroughly to combine. Add salt and pepper, to taste.

Wrap 2 to 3 tortillas in a damp paper towel and place them on a microwave-safe plate. Microwave until the tortillas are warm and pliable, ⏱️ 30 seconds to ⏱️ 1 minute.

Working with 1 tortilla at a time, spoon 2 to 3 tablespoons of the beef mixture in a line at one end of the tortilla and tightly roll it up. Brush the edge of the tortilla with the egg wash; press firmly to seal. Repeat the process with the remaining tortillas, beef, and egg wash.

Preheat the air fryer to 375°F, if required. Spray the air fryer basket with cooking spray. Brush the tops of the taquitos with oil. Working in 3 batches (8 at a time), place the taquitos seam-side-down in the basket and cook until golden, 6 to ⏱️ 8 minutes. Flip the taquitos over and brush with more oil. Cook until crispy, 3 to ⏱️ 5 minutes more.
