Preheat air fryer to 375°F. Lightly oil 6 8-ounce ramekins.

Toss together potatoes, peppers, onion, garlic, and oil in a bowl. Season with salt and pepper. Transfer mixture to prepared ramekins. Air fry in batches, stirring once, just until potatoes are tender and golden brown, 15 to ⏱️ 17 minutes.

Remove ramekins from air fryer. Make small wells in the vegetables and carefully crack an egg into each. Air fry to desired doneness, 3 to ⏱️ 6 minutes for a runny yolk. Sprinkle with parsley just before serving.
