To cook the ears of corn on the grill, remove the husks until you reach the last layer. Leave that on.

Preheat your grill or grill pan to very hot.

Grill the corn, rotating it every ⏱️ 5 minutes or so, until the husks blacken and the corn kernels underneath blacken too. Remove the corn from the heat, peel off husks, and proceed with the recipe. Alternatively, if you have a gas stove, do what I do: Shuck the corn completely. Turn the burners to high and place the ears of corn directly over the flame, rotating them every ⏱️ 5 minutes or so, until they are evenly blackened.

While the corn is cooking (by whichever method!) place the paprika, salt, chaat masala (if using) and cayenne in a small bowl and stir to combine. Set aside on the dinner table along with the lime quarters.

Brush the charred corn with melted ghee. Serve immediately, directing your guests to eat them like so: Dip one side of a lime segment into the spice mixture, then squeeze and rub it directly onto the cob. Repeat as you wish!
