In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon. Sprinkle with the taco seasoning and a pinch each of salt and pepper. Cook until the beef is cooked through and browned, 5 to ⏱️ 6 minutes. Remove the beef from the heat and set aside.

Spread the rice in an even layer on the bottom of a 2 1/2- to 3-quart baking dish. Top the rice with the following ingredients in this order, spreading each in an even layer: the beans, then the corn, then the tomatoes and green chiles, and then the cooked beef. Sprinkle the dish with the monterey jack cheese. Bake until the cheese has melted and the casserole is hot throughout, 18 to ⏱️ 20 minutes.
