Defrost the edamame: simply place in a small bowl and cover in boiling water, leave until softened for ⏱️ 3-5 minutes. Drain and discard the water.

Toast the bread; while still warm, rub one side with a clove of peeled garlic, then cut into bite-size pieces. Set aside.

To make the dressing, finely chop the rest of the clove of garlic. Place in a small bowl and whisk together with the balsamic vinegar, lemon juice, maple syrup and olive oil until well combined. Set aside.

Assemble the salad. Toss the rocket with the chickpeas, avocado, onion, edamame, and chunks of sourdough. Toss with the dressing and serve, seasoning with salt to taste.
