20-Minute Peanut Butter Thumbprint Cookies
These soft, peanutty cookies are filled with a pocket of melted chocolate and a hint of sea salt. They’re super simple to make, coming together in just one bowl, and take only 20 minutes from start to finish – perfect for a mini baking project.

Preheat the oven to 160°C fan / 350°F. Line a baking tray (roughly 25 x 30cm / 10 x 12”) with baking parchment.

Add the coconut sugar, flour and baking powder to a bowl and mix with a spoon until combined.

Add the peanut butter, milk, melted coconut oil and raisins, then stir until you have a semi-firm cookie dough.

Use a tablespoon to scoop out 12 evenly sized pieces and roll into balls. Place on the lined tray, leaving space between each one. Press your thumb into the centre of each ball to create a dip, then place a chunk of chocolate into each one.

Bake for 10–⏱️ 12 minutes, until golden and slightly spread. Remove from the oven and leave to cool on the tray for a few minutes. Enjoy whilst they’re warm or leave to cool completely on a wire rack.
