15 Minute Tortellini Carbonara Pasta

First, bring water to a boil in a medium sized pot. Cook tortellini pasta according to package directions, reserve about 1/2 cup of the cooking water, and drain. Set aside. (While the pasta is boiling you can cook your bacon- see next step)

Cook your bacon in a large pan (~⏱️ 2-3 minute per side), remove from from the pan, blot with a paper towel, chop it up and set aside.

In the same pan you cooked the bacon add onion and garlic, sautéing for ~⏱️ 2 minutes until translucent.

While onions and garlic are cooking take a small bowl and combine 2 tbsp of the reserved pasta water, greek yogurt, parmesan cheese, egg and Italian seasoning. Whisk it together well.

Remove your pan from heat, add cooked pasta followed by yogurt/cheese mixture and gentle toss to coat evenly. (If you like a thinner sauce you can add more of the reserved water)

Serve your tortellini carbonara topped with the cooked bacon and chopped parsley! Enjoy!
