15-Minute Tomato & Harissa Chickpeas
This is the sort of dish we make when we really don’t feel like cooking but still want something warming and delicious. There’s barely any prep involved – just a little stirring, then let everything simmer away until rich and creamy. It works for pretty much any meal of the day, especially with lots of toasted sourdough for scooping.

Warm a shallow casserole dish or sauté pan over medium heat and add the olive oil. Add the garlic and ginger and cook for ⏱️ 2 minutes, until fragrant.

Stir in the harissa, cherry tomatoes, chickpeas with the stock from the jar and the maple syrup. Simmer for 15–⏱️ 20 minutes, until glossy and reduced by about half.

Stir in the yoghurt and season to taste. Scatter over the coriander, basil, then drizzle with tahini (if using). Delicious piled on top of toasted sourdough.
