Cook the pasta in a pan of salted water, according packet instructions. Drain, reserving a little of the pasta water.

Place a frying pan over medium heat and add a drizzle of the oil from the sun-dried tomato jar. Add the onion, garlic and a pinch of salt; cook for ⏱️ 5 minutes until soft.

Add the chopped sun-dried tomatoes, olives, tomato purée and balsamic vinegar; cook for 5–10 more minutes.
