15-Minute Guacamole & Red Bean Salad
We’ve given a little love to our Guacamole Salad recipe. This simple but mighty salad, hero’s nutritional powerhouses like red beans, which provide plant-based iron and protein, creamy avocados, a source of healthy monounsaturated fat, and tomatoes, which are a brilliant source of Vitamin C and antioxidants. Perfect for a quick lunch or light supper.

In a bowl, toss together the tomatoes, chilli flakes, red onion and a generous pinch of salt. Set aside to marinate, then drain any excess juices and stir through the olive oil before serving.

In another bowl, mix the beans with half of the lime juice. Set briefly aside to marinate.

Place the avocadoes in a bowl and roughly mash with a fork. Stir in the remaining lime juice, coriander stalks and some of the leaves, reserving a handful for garnish. Season generously with flaky sea salt, adding more lime juice as needed.

Toast the rye bread (if using), then divide the tomatoes, beans and guacamole between plates. Top with the remaining coriander and a drizzle of extra olive oil (optional).
