Preheat the oven to 180°C fan / 400°F. Place the broccoli florets on a baking tray and drizzle with oil and salt; cook for 5–⏱️ 10 minutes until charred.

Cook the noodles according to the packet instructions, then drain and rinse with cold water to prevent further cooking. Leave to one side.

Place a frying pan or wok over medium heat and add a drizzle of sesame oil. Add the onion and garlic and cook for 5–⏱️ 10 minutes until soft.

Add the beansprouts and peppers and cook for 5–⏱️ 10 minutes until soft.

Stir through the remaining ingredients, including the noodles and broccoli, and cook for ⏱️ 2 minutes to warm through.
