10-Minute Peanut & Greens Rice Bowl
This is one of those dishes for when you’re short on time, low on energy and lacking the mental capacity to think about dinner but still want something nourishing. If you’re feeling organised, make a double batch of the sauce and keep it in the fridge ready for another meal. We’ve suggested green beans, peas and kale, but you can swap these for any quick-cook vegetables.

📝 Preparation Steps

Start by making the sauce. Whisk together all the sauce ingredients with 2 tablespoons of water until smooth – it should be pourable, add a little more water if needed.

Bring a large saucepan of salted water to the boil over high heat. Add the green beans and tofu and cook for 3–⏱️ 4 minutes.

Add the kale and peas and cook for another 2–⏱️ 3 minutes, until the peas are just tender. Drain well and return everything to the pan.

Stir in the rice and peanut sauce and warm gently over low heat. Divide between bowls and scatter over the sesame seeds before serving. Serve with extra tamari on the table for everyone to help themselves to. Delicious with finely chopped fresh chilli.
