10-Minute Butter Beans with Rocket Pesto
This is quick and easy cooking at its best, showcasing what you can do with a few simple ingredients. We love it as a lazy lunch, or as part of a bigger spread with lots of tasty dips and nourishing salads. If you can, use good quality butter beans and olive oil, as you’ll really notice the difference.

To make the beans, simply combine the butter beans, lemon zest, a good glug of olive oil, a pinch of flaky sea salt (taste the beans before any adding salt, as they may be sufficiently seasoned), black pepper and a squeeze of lemon juice.

For the pesto, add all the ingredients to a mini-chopper and blitz until you have a coarse paste, adding a splash of water to loosen as needed.

To serve, tip the beans onto a large plate, or shallow bowl, and spoon over the pesto, adding handful of rocket and a generous pinch of sumac (if using) to garnish. Delicious with fresh sourdough bread.
